They say “Don’t judge a book by its cover.” And I agree.

They say “Things aren’t always what they seem.” And I agree.

But the reason these statements are needed as reminders is that mostly things ARE what they seem. You’ve just gotta love things in life that are 100% straightforward, no nonsense, what-you-see-is-what-you-get. Take roasted Brussels Sprouts, for example, which I’m LOVING. They seem very healthy, and they ARE. They seem like a food that is going to make you feel fresh and light, and they DO. And they are also DELICIOUS without much help at all. Can you imagine greater culinary enjoyment? Healthy + Fresh + Delicious! Try this recipe and Believe Your Eyes; they are everything they seem and MORE.

Slice Brussels Sprouts (the heads) in half (as many as you want)

Toss with Extra-Virgin Olive Oil, Cracked Pepper, and Sea Salt (all to taste)

Bake on a rimmed baking sheet at 450 degrees for about 25 minutes, or until they are al dente.

If you want to fancy these up for a special occaision…

Add sliced almonds, golden raisins, and crumbled bacon! Et voila!

    Dear Tobi,
Our Family loves Roasted Brussel Sprouts despite my childhood revulsion to the “Boiled Variety”. Roasting with the Nuts and addding cubed Apples makes it AMAZING. Young and old enjoy them .Thank you for the reminder.

  3. Tobi, I can’t believe the timing of this. I just had brussels sprouts for the first time since I was little last week…I remember thinking they were awful, but my friend made them like this, tossed with balsamic and I LOVED them. I made a batch for the fridge and tossed them in salads. so yummy.
